Me and my roommate just bottled our first batch of beer about 10 mins ago and we are pretty pumped. Everything went so perfect through every stage that we are now worried something is gonna happen now....perhaps bottle bombs!!!! No just kidding we need to "Relax, don't worry, and have a homebrew" in about 2 weeks. It is just a real simple amber ale. We figured we would start off easy. Our final gravity was a little higher than the recipe called for and we bottled after about 11 days in secondary fermenation at a gravity of 1.018. I was worried about that, but I had several people tell me that it would be ok at that.
I have also been told it is fun to try the beer about every three or four days just to taste how it improves over time. Would you all recommend that for some first timers.
PS we are both officially hooked and are now looking to brew a Newcastle clone. Any places to find a good free recipe for 5 gallons????
