I fermented my first batch of beer in a better bottle equipped with a spigot. My intent was to skip the bottling bucket, and bottle from the spigot on the carboy. When I went to attach the bottle filler, I noticed that I had installed the spigot plunger upside down. So, I had to lay the carboy on its side to re-install the spigot plunger. I sanitized as best I could. Obviously, this stirred up some sediment, but I couldn't really see how much. I thought, nuts, I'm going to have to let this sit for a few days to re-settle. But since it is a hefeweizen, it was never clear to begin with, so I waited an hour and bottled it anyway. Was that the right decision?

well its not a wrong decision. i would of waited till the next day. but seeing as its bottled its a little late now. there will be a thicker than normal layer of yeast crud at the bottom of all your bottles. don't worry its harmless. just make sure anyone you give the beer to knows what that stuff at the bottom of the bottle is and not to worry.

let the bottles sit in the fridge for a week before serving to settle out all the yeast.
