I've always been curious about how the chinese ang jiu and how it is made. Reading the article I did a quick search on the net: http://unclephilipsg.blogspot.com/2009/07/homebrew-chinese-rice-wine-aka-ang-chow.html. I'm going to look up some better sources, but anyhow I go to the asian mart frequently and I've seen all these ingredients so I might give this a try sometime.

Of course the handling technique can be cleaned up better (i.e. allow the lees to drop, clear it, etc.). This should be fun.
