I recently entered my pale ale that I have brewed up 4 times(5th tomorrow) into some competitions and got 2 distinct and interesting results:
-1st comp, scored 37 made mini-BOS got great reviews
-2nd comp about a week later scored 27 and both sheets noted heavy tea/black tea flavors and it got dinged pretty good.
(both judged about 2-3 weeks ago)
I happened to have 1 bottle left in the fridge and cracked it last night...MAN IT WAS AWFUL! Huge black tea taste and i dumped it after 1 sip and man that taste lingered for quite awhile.
Here is the odd thing, I bottled all 5 at the exact same time and it was about 3/4 way thru the keg which tasted great and almost won me brewer of the month from my brew club. Never had any of those off flavors while kicking that keg!
So I have a few questions:
-what could cause that black tea off flavor after a few weeks of tasting fine?
-do I chalk it up to unclean bottles?
-any suggestions to avoid this
The only notes I have my brew day that vary or were off was I mashed in low at 150 instead of 152.
