I just tasted a 2-hearted clone that I did a few weeks ago.
I went easy on the OG since I thought I would use the yeast cake for a different batch later.
I neglected to adjust the hop schedule to make the beer smaller....
As it turns out it is a little bit too bitter. It went from 1.050 to 1.009, but has about 60 IBU.
It had 1oz added early, at 60 Mins, then half ounces at 20, 15, 10 and 5 and 1oz dry hopped.
I am wondering how long it will take for the bitterness to soften a bit. I think the 'bittering' and 'flavoring' needs to fade a bit, but I know the aroma will as well.
I think this beer would be perfect at about 40-45 IBU. How long does this stuff take to fade, and does it matter if it is kept at 65 or 35 degrees? Do Bitterness, Flavoring and Aroma all fade evenly, or differently?
