Hello, I am looking for a little help/advise. I brewed NB American Wheat beer kit. Everything went as planned and as per the instructions. It spent 2 weeks in primary and then got bottled. It has been in the bottles for about 5 weeks. I put some in the fridge and let them chill for a couple days and they have an extremely bitter after taste. I feremented between 68 and 70 degrees. Would ferementing at this temp leave me with bitter beer or did i screw something else up?

Hmmm, I don't know what the issue could be. I assume the recipe is not particularly bitter as far as hop rates go.

Can you describe the bitterness? Harsh? Astringent? Tannic? Tea-like? That would help nail down the cause.

Did you use tap water or bottled water in the recipe?
 
it could be the temps, but they aren't that bad , they are in the mid range for the kit yeast

personally I find willimette a bit harsh for a 4-6%aa hop. I just don't like it.
might try it again with Mt hood or fuggles.
 
Thanks for the help guys. I have been using village tap water for the last couple of beers and they have turned out good. The beer tastes good but leaves a very harsh aftertaste.

I'm on my first batch of beer that is now on its fifth week of conditioning. My week four tasted bitter and was hazy coming right out of the fridge. But after letting it sit, the haze went away and didn't taste bitter. I think the beer just tastes better at 50F than it did ice cold.
