ok gents

as im still a newer brewer i came here for advice and perhaps some links.

i am leaving town in 10 days and will be away for roughly 3-4 months. im hoping for someone to chime in on a great tried a proven recipe for a beer that fits the criteria of something that is:

1. able to secondary/condition for several months prior to bottling
2. suits a great winter style (preferably a good porter but not necessary)
3. something that wont require anything be done to it after primary what so ever(i.e no dry hopping)
4. scaled to 5 gal
5. has a grain bill that fits my 15 gal BIAB kettle.

i enjoy many styles of beer (Belgians being my fave) and am open to all suggestions. please though if you have a suggestion it would be much appreciated if you can link to a good recipe

thanks

Try a Kate the Great clone - pitch a large healthy starter and let it ride in the primary for the entire period. You may want to try oak-ing it as well, since you have the time (I.e., pitch the oak when you leave and pull it when you return. As thus us a large beer you could go for a 3 gallon batch.
