I just bottled an Ipa.. I normally let it carb for 2 weeks then in the fridge for at least 2-3 days before I drink it .. I will not be able to drink this beer for a few weeks so my question where is it better to store my beer for a few weeks after the initial 2 weeks to carb.. At room temp or in the refrigerator?

I ve heard that letting the beer sit for a few extra weeks can improve flavor, but not sure if that means at room temp or refrigerated?
 
I normally let my beer sit to carbonate/condition at room temperature for at least 3-4 weeks before placing them in the fridge. If there is not room in the fridge at that point I put the beer in a cool, dark place. I use a closet in the house since I don't have a basement. After 4 weeks I try to keep my bottled beer at 60*F or below.
 
I would taste it right after carb if possible. If it tastes like the yeast need to some more work leave it at room temp(RT) although if you have a spot cooler than 70 you may want to put it there. If it tastes generally how you want it throw it in the fridge for a few weeks. I have seen better results when i let the beer chill in the fridge for a week or 2 before drinking.

Generally speaking AA will break down faster at higher temps as well as yeast will be more active, in an ale for sure, at RT.

Leave some out and throw some in the fridge then take some notes on how they differ after those few weeks/ a month.
