I am brewing my Bohemian Pilsner with White Labs Lager Yeast 800. I have brewed it a number of times but always fiddle with the schedule. Anyone has a go to fermenting and lagering schedule for WLP 800? I have temp control so that is not an issue. Thanks:mug:
 
I've tried all different profiles and found that keeping it simple is the best. I personally ferment all my Lagers at 10 Celsius, at day five I will have 4 gravity points left till final gravity which I confirmed with a fast ferment test and then I transfer to the spunding keg to complete fermentation and naturally carb for another 5 days still keeping the temp at 10 Celsius. I then Lager at 1 Celsius for about 2-3 weeks.
