Hey guys,
I went to my LHBS today to grab a few things needed to make a Begian Wit. The owner was out on Wit yeasts, so I consulted his chart from White Labs. Obviously the two Wit strains they make were highly recommended for this style but their Antwerp and Trappist were listed as good potentials. He only had the Trappist WLP 500 and I bought it. Has anyone ever tried this yeast for a Wit??? Thoughts??? It recommends to ferment lower for less fruity, more earthy. Which is preferable for this style? Thanks.
