I'm brewing an IPA as I type, with a targeted ABV of roughly 7.8%. I used 18 lbs of Grain but I also bought clear belgian beer candi (rock candi stuff) as well as amber belgian beer candi. This brew is looking very dark in color already and is smelling awesome.

I've never used candi before and I'm wondering if I should throw, say a half pound in with 15 minutes left when I add in moss. Any advice? Also if I decide to do this what overall affect will it have on the beer, and which should I use, the amber or the clear?!?!

It is going to bump the gravity for sure. When I did the PTE clone it called for .5lb sugar i think and it just increased the ABV. Give it a go and send me a bottle when it is ready
 
The clear candi will not impart any flavors. It will just raise your abv. The dark candi will raise your abv and give some color, with minimal flavors added. Adding with 15 min left is just fine.
 
The sugar will also dry a beer out. It is close to 100% fermentable and will thin out the body.
 
interesting. I'm thinking this one is going to come out pretty meaty, a little thinner and more alchohol is fine by me. Good to know though
 
If you do some research on here, many experienced brewers will say not to buy the clear Belgian candy sugar because it doesn't add any color or flavor. They just use table sugar instead.
