I’m a beginner brewer. I’ve made a hef and a mead before, but neither turned out great. I recently tried a simple recipe for a quick, basic mead. I got some decent bubbling for the first month, but when I did a check with a wine thief (sanitized, of course) all bubbling ceased afterwards. Now I don’t know what to make of it. Explanations?

You might be done. Use a hydrometer and see where you are at, if 1.000 plus or minus a bit then you are likely done. If no change after a week then definately done. Then rack from the lees and let it age.

Read through some of he info on the forum, there is a lot of useful info here.

Don't know what your temps are, but at 72F (approx) my ferments tend to finish in a week or two. Some will go longer, but pretty much after a month they are done.
