Finally starting to brew some Belgian style beers. Did a couple 1.054 beers so as to harvest the yeast using some Mangrove Jack strains. First time using these particular strains; any input would be great. I'll keep mine updated if there's interest. I fermented these mid to low range of specs and are resting now around 60-62F.
Belgian Blonde (far right) is about ready for the keg. Used M47 Belgian Abbey for this one. Attenuation and Flocculation in yeast description were accurate. I brewed it on Dec 10 and seems ready for the keg but not in any hurry. This is actually the secondary that I added some candi syrup to; collected about 60% of the yeast when I transferred. This still only calculates OG at around 1.060 so will harvest the yeast and do a side by side in the future using the yeast collected from the lower gravity wort to the second grab.
Belgian Pale Ale also brewed Dec 10 (double brew day...be a while before I do that again) using M31 Belgian Tripple also looks like it's staying accurate to the description on MJ website. Floc may be a little less than described but attenuation is at 81% now and bet it will set another 2 weeks or more before it's ready for the keg. I figure it will fall out when it's good and ready.
On the left is an ESB that photo bombed the pic. Using S04 rehydrated/oxygenated. Pic is about 18 hrs from dropping yeast and just starting to take off. Now, 29 hours in, it's blowing the top off. Basement is low 60's right now so perfect IMO for this yeast.
