Beers with the lowest fermenting temperatures?

What are some beers that use yeast with low fermentation temperatures? I bought a wine cooler that right now only goes up to 55 degrees. I eventually want to do a temperature control override but for now just want to brew a couple batches as is. The guys at the homebrew store gave me a recipe for a kolsche which uses a yeast that has a fermentation temperature at 60 or 65 degrees but they said it will still work at 55. Are there some other recipes I can try with this setup?
 
I believe that Nottingham will ferment at 55. Give your beer about 5 days at that temp and then let it warm to room temp for the next 2 weeks.
 
Just spend 15$ on a stc-1000 then you can do anything you want.

that is my plan, I am just researching how to do it but thought I could brew some while Im figure it all out and waiting for the parts

Hopefully no higher than 68*F if it's still actively fermenting. Notty is great cold, but will produce some funky esters into the upper 60's and beyond.
 
Scotch ale yeast will make a very clean beer at that temp. With that you can make a very wide range of beers. Pretty much anything with a clean yeast character.

Sounds good, can you recommend a recipe?
 
How about a lager? Ferment cool (50-54) for 1-2 weeks then warm to room temp for a few days for d-rest, then crash it down to near freezing and lager. Would work great with your set up!

Wyeast Scottish Ale yeast will do well down to 55F for ales. Otherwise, try lagers or Altbier.
