I am sure there is a book I can read to find out all about water. In fact it is probably called Water. Probably written by John Palmer. Anyway,

I am trying to just duplicate Tasty's water profile or close to it. I have 12 gallons of distilled water. I have Epson Salt, Canning salt, Baking soda, Gypsum salt, and calcium chloride.

My plan is to play with John Palmer's calculator until I hit hit the numbers I want or close to it. Then take a gram scale, throw them into a 15 gallon water container I have set aside for all my water requirements, then use that water to brew as usual. Does this seem right?

I have read people putting salts in the mash or in the strike water. I don't know. Let me know. Hope this makes sense. :mug:
 
I just got done reading the water book, and reading the Bru'n Water info.. its good stuff and ive learned a lot in the last couple weeks..

I recommend that.. then after you have a decent understanding about whats going on you can mess with it.

Yep, it is called Water, and it is written by John Palmer, and if you read it and apply it, adding salts to mash and strike water will make sense. Just tossing salts in without understanding what's going on might not be so good ...

And listen to what Martin B. up there says, too. The Bru'n Water resources are awesome.
 
Bru'n Water has a lot of info written into the program. You can also read through the Brewing Water Chemistry Primer sticky in the Brew Science forum. Unless you really want to geek out on the science of it all (as I often do), you really don't need to get a whole book on it.
 
+1 for Bru'n Water.

As for your minerals, I keep it simple. I only use Gypsum and CaCL and Calcium carbonate as needed. I dont bother with Mg or Na... Thats just me though
