I really like the town of New Paltz, it's an exit up on rt 87. Gilded Otter is a great brewpub and Bacchus usually has a decent beer menu.

Also Lake Minnewaska State Park has a massive waterfall and some picturesque mountain top lakes.

I heard the Orange County Choppers restaurant is pretty cool... Also a few exits further north (Kingston, I think exit 19) you have Keegan's which makes some good beer.

I grew up in Cornwall. Truthfully, not a tremendous amount to do in the area. The scenery and landscape is nice to drive around. Newburgh brewery is good but very expensive, and not in a great area. Newburgh has a bad reputation for very good reasons. I'd take a day trip and check out New Paltz. They have good restaurants, bars, and a lot of local art. There is a lot of hiking to do as well. The other side of the river is more developed and has better shopping/restaurant options. Hyde Park has a brewery as well - not sure how great it is. It's a nice area to drive through and you could always do the FDR estate tour. If you have a wife take her to Woodbury Commons and she'll go nuts shopping. I used to work there in high school. At the time it was the largest outdoor mall in America. Prepare to wade through a sea of Asians, NYC folk, and hasidic orthodox but it does tremendous shopping.
