Hi,

I've brewed a beer 5 days ago and it has a smells that is close to champagne. I've used open fermentation on this one because my mother said it was the way beer was fermented 30 years ago here in portugal (azores). Does wild yeast has anything to do with that smell?

it might be...
you will notice once the beer is ready. try to do a closed fermentation and compare the two tastes. there are small chances that the beer with wild yeast is good, or at least interesting, but I would suggest to prefer closed fermentations.
