I over-pressurized my keg trying to carb it and beer came back all the way through the co2 line and started foaming out of the manifold. I corrected the problem, do I now need to sanitize the co2 line and/or the manifold, or can that wait until I change kegs?

I would recommend that you always clean and sanitize your gear ASAP. The longer you wait, the more difficult it can be to remove all those little bits of dried yeast and malt. Soak everything in some PBW or Oxyclean (without bleach), rinse well with warm water, and then satirize with idophor or star san. In the future, you can avoid experiencing blowback by not carbonating through the dip-tube (I am just guessing that is what you did).

Or not overfilling your kegs so the beer doesn't go above the "out" diptube!

I'd clean everything out real good ASAP. And install some check valves on that manifold!

I bought inline check valves from US Plastics. Not to tote that company, but they were the only ones I found that had them. I put them about 4 inches back from the QDs and then ran the line to my mainfold. This way, if I ever get a back up, I only have to worry about replacing a couple of inches of air line as opposed to cleaning a manifold or scrapping my regulator.
 
I had this happen to me a couple of times when I first started kegging. If the beer made it all the way to the regulator I would give it a good cleaning. If you don't it may eventually leak and possibly infect your other kegs. Just talking from my own experiences.
