I always thought darker,maltier beers for mop sauces was good. This proves it!:mug:

I knew darker beers were rich in antioxidants, I guess that is some of what is at work here....either way...........EVERYTHING IS AWESOME!!!!!

Sure, and you can eat what you like, too. Any reason to eat more BBQ and drink more beer is a good one, I say.

This is also coming from a guy that was vegan for over a dozen years. I'm just selective in what I buy now. I've never bothered other people with what they buy or eat.
 
I came in here to read a thread about grilling and homebrew. What I got was some judgmental jerkfaces...


Who gives a crap what other people eat if they're not forcing you to eat something you don't agree with?

Goodnatured trolling is one of my FAVORITES, but you have to call it what it is.

If I came into your "Vegetarian rice recipe" thread, and said that the rice would be 50 TIMES BETTER with chicken stock, I would get some veggie backlash, NO?
 
This is good information. It is a shame though that they are advocating marinating (can't we just drink the beer while grilling?) as a good cut of meat needs nothing added to it, except for maybe some salt and pepper. It should be flavorful enough by itself. For the cheaper cuts, definitely.
 
I imagine that a little brew poured on the grilling meat (needs NOTHING??? really?) would do about the same if poured on before it hits the heat.
 
emphasis on needs not nothing... not saying you have to go without, hence the underline on needs, but a good flavorful cut of meat should be able to stand alone. I am not a meat purist, anti marinades or even against steak sauce for that matter. I just wince slightly when I see, for example, a beautifully marbled ribeye or the like doused in A1 or coated in Montreal Steak seasoning or something of the sort.

True, but it has its uses. For when you are forced to eat someones cooking and the meat tastes like cardboard or maybe shoe leather or any meat the texture of the turkey from the movie Christmas Vacation.

I do recall a time or 2 of Overcooked, unseasoned steak being served at some picnic or other, but not in the last 10 years. Has ANYONE not heard of Bobby Flay?

(not saying that Bobby is a god, but if you have at least heard of him, that is a GOOD sign)

I went into STONY RIVER last year, was served the only steak I have ever eaten that was arguably better than I could have done.

I asked the Maitre D if there was any A1 in the place......he looked slightly ashen and said "Why yes".

"That's a shame", I said.

Those who know me well know my mantra: "Ketchup is a band-aid for bad food." It - and ranch dressing - is what parents put on food their kids don't like to get them to eat it. A1 (or any other steak sauce) is simply ketchup for adults. I absolutely HATE people who grab the ketchup (or A1) before they even TRY the food. It's insulting to the chef/cook. (I have heard of a burger restaurant that feels their burgers are good enough, if you ask for ketchup on them, you are escorted out of the building)

My mother is uber-paranoid about foodborne pathogens, to the point that she won't eat a steak or burger if there's a HINT of pink in it. Well-done isn't quite cooked enough for her. So as a kid, dad was forced to cooking our steaks to the point they almost cracked when they hit the plate. You HAD to use ketchup to make it edible. Once I learned how a steak is SUPPOSED to be, I stopped using ketchup (or any other condiment) completely. I actually have 6 bottles of steak sauce in my fridge right now, because friends that come over to eat know that if they want it, they need to bring it with them because I refuse to buy it. My best friend from college is one that automatically reaches for the ketchup -- unless he's at my house. He knows my stance, and he will at least try the burger (or steak, or chop) without ketchup first.

She tells me that the majority of people who complain of the quality of a steak are the ones who insist that it be well done/pretty much just carbon left, and then expect a free meal. You may as well hand them a couple lumps of charcoal for what its worth. So, you insist on it being overcooked, but still expect it to be juicy and tasty? Crazy.

I think thats why one of the restaurants near me put this on their menu

Many of the steakhouses I go to now have a disclaimer on their menu, something to the effect of "We cannot be responsible for steaks ordered well-done"

I love mixing A-1 with ketchup as a dipping sauce for steak fries. I'd never put it on a steak though.

I would have to say that sticking my head into the lion's mouth, as you put it, has long been a hobby of mine. Cast out, set the line, and yank hard.

If I had a vegetarian rice recipe thread and you came in and said that the rice would be better with chicken stock, I would have to ask what your definition of better is.. Better taste, or better health? One is subjective, one is clinical.

There's so many mis-informational or dis-informational things that are put out there. And I am sure that there are certain elements who believe what they read, simply because someone claiming to be an expert or having an insider view have made the claim. In the case of this thread, I bet that some have clicked fully expecting to find out that their health is indeed improved by eating the charred flesh of an animal bathed in some sauce and washed down with beer. And I sure don't mind taking some heat when I say something that upsets the apple cart. I did, as it may be, choose to enter the arena with the lion.

Oh, no doubt. But like you said, we have to assume there are idiots who don't bother to think everywhere. The chances of you getting them to start using common sense anytime soon are pretty much nil, so why bother? Besides, if all on gets out of this is marinade your steaks in beer, one is still purportedly better off than if the steak was not marinaded, no?

This thread is supposed to be lighthearted, hence the Chit Chat section. It would have been in the debate section if any serious consideration of the implications of this report were intended. It's not unlike when the report about beer rehydrating faster than water post workout appeared in a fitness forum I was a member of. There were rounds of cheers, and much celebrating, but no one started drinking a 6-pack after every workout. Or, if anyone did, I have good evidence that individual was hopeless from the start.

The thing is you're not spouting information people haven't heard before. Some people like to enjoy grilled meat. Some people don't. Whatever your motive for posting in this thread you come of as pompous with a better than thou mentality.

I personally don't care what other people wish to eat. If it can be avoided I never eat GMO anything, but I wouldn't go into a thread where people were talking about a great way to eat GMO and tell them they're wrong for doing so.

You prefer to not eat meat. Good for you (I really mean that). People in this thread prefer to eat meat. Well, that's their prerogative. I'm sure they didn't come into this thread to be chided.
 
I gotta say I would feel better about these "findings" if they had done a control where they soak the steak in cold water rather than beer.

Since the carcinogens are formed by high heat, by having soaking wet meat, you are effectively poaching it rather than grilling it. I wouldn't be surprised if that's why it seems safer (the moisture, not the beer's antioxidants)

I didn't say it was wrong to eat meat. Whether I believe it to be so or not is besides the point, I simply challenged the claim that eating meat can be healthy.

I find that quite often, it's a matter of exposure. People remain ignorant until they learn about it. It's not shameful, it's just a matter of someone learning something new which shatters their current paradigm. In my case I was a happy carnivore until I read a book which spoke about the health ramifications of eating meat. I didn't quit right then, but my interest in knowing more so I could make my own educated decision about what I choose to put into my body. Now, I don't say that my way is the absolute right way, but it is for me. Who knows? Someone else may see it and think "What, eating meat causes heart disease? I want to know more!"

It could happen.

I honestly am becoming concerned about carcinogens in grilled meats. This info (hope it holds out) is enough to ease my mind about the grilling.

The funny title of this thread was meant to attract people. A great member posted it before, but with a lame title. This is a very cool beer story. People should see it!

If they learn something, all the better.
 
I'm taking this information and running with it. Saturday I made BBQ jerk chicken, the marinade was just half jerk sauce and half Fullers London porter clone. Came out great! when I get home today I think I just might sink a pork loin in some beer based marinade and let that go until the weekend and smoke it over some apple wood. Now the question is what beer should I use? Porter, CTZ IPA, APA, roggenbier, wee heavy, man come to think of it I have a sh*tload of beer.
 
I don't like IPAs in cooking.

Take with that the fact that to me, Stone Ruination is about the perfect IPA, and Bell's 2 hearted is about the perfect beer.

Bitter food does not agree with my palate.

Coffee marinated steak is fantastic, so stout marinated steak would be great, I am sure.

ALSO.......dark, unfiltered homebrew has the most antioxidants......arguably more than red wine, and so the most benefit in regards to this article.......(I assume)

You're giving it more thought than it deserves. I just wanted to be funny. I fully understand that BBQ isn't healty, but I willingly choose to eat, as I choose to drink beer. I am overweight, and understand the health consequences of it, I try to get my 8-10 hours a week of exercise.

I'm 6'2" 27 (turning 28 soon) 220lbs, can bench a little over my weight, squat and dead about twiceu weight. BP 120/60, 50 BPMs, both grandfathers nonagenarians hanging on strong and blood work ideal. I am fully cognizant that my diet will eventually catch up with me, but until then... I'll continue with the wreckless diet.
