Base for Pecan ale

Can I get opinions/critiques of this for the base of a pecan ale. I am trying to shoot for a sweet malt foward brew that is light on the bitterness.


57% 7 0 Golden Promise
8% 1 0 Biscuit Malt info
8% 1 0 Caramel/Crystal Malt - 30L
8% 1 0 Rice Hulls info 0 0 ~
8% 1 0 Cara-Pils/Dextrine info
8% 1 0 Wheat Malt info
2% 0 4 Piloncillo info
12 4

1 oz Williamette 60 min.
.5 oz Williamette 15 min.

Like 10 oz of roasted pecans in mash.

WLP037?? Maybe.
 
I have read where other people basically roast as much oil out before hand. And then compensating for the lack of head retention due to oil with the wheat malt and carapils.
