Hello all.

I brewed my version of banana bread beer today. I mashed 7 lb of bananas and put that into my mash. I was worried as it seemed to get jelly like at the end and I didnt have any rice hulls in it, but I sparged just fine.

5 gallons

6 lb pale malt
3 lb wheat malt
1 lb Biscuit
1 lb Munich
1/2 lb flaked oats
1/2 lb crystal 80

7 lb mashed bananas

.25 oz Green Bullet whole boil
.5 oz Motueka at 10
.25 oz Motueka at flame out

pitched a 1 l starter of WLP300 Hefeweizen

Ferment at 72 for 2 weeks

And for those of you who know who Harry Chapin is, I did listen to "30,000 lbs of bananas" while brewing this.
 
I just brewed one myself two days ago. Pretty similar grain bill too.

6 lbs. 2 row
3 lbs. wheat
1 lb. Crystal 60
1 lb. Victory
.5 lb. Biscuit
1 lb. bananas

Saaz for the hops.

Fermenting WLP 300 at 70-72.

The color came out awesome, but I'm wondering how much esters I'm getting as there is no banana smell from the fermenter yet. I'm thinking I should have skipped the starter this time. Wells & Young's version tastes like they use a banana extract and I'm hoping to skip that by getting all the banana from the yeast.
