Just poured my 8.7% neipa I kegged yesterday And it’s got this lingering bitey bitterness specifically on the back of the tongue. Initial sip has great hop flavor, juice then as it hits the back it pops into that bitter flavor which is nothing like I’ve tasted in well done neipas Or some of my other NEIPA hb’s. I didn’t use any bittering hops just whirpool and DDH additions. Fermented in the 68-70 deg then I capture the co2 in a Mylar balloon so I hopefully don’t get any o2 suckback when I cold crash and I transfer from fermenter to keg in a closed co2 system with both the fermenter and keg cold, so I really doubt it’s oxidation related. I brew with RO water and use bru’n water and this had 84/220 Sulfate:chloride ratio, ph was good at 5.3. Any ideas here or is it just that the beer is not keg conditioned and I’m getting some residual carbonic acid flavor from force carbing. Pours great and I set my serving psi to 8 after purging the keg a few times. Initial smell, sip, swallow are nice then it moves into this burn that changes to a perceived bitterness on the back of the tongue. Thanks for any thoughts.

My guess is it left over dry hop is suspension causing it. Give it a week or two to settle out.

ok i can see it does have that green fresh hop bite to it too The initial smell, sip, swallow are great and then yeah it has this burn that then turns into a lingering bitterness.

Plus one to this. Reminds me of when I drink the hydrometer sample of a hoppy beer before moving to bottles.
