Baby on the way, Need a technical recipe that takes 9 months.

With a baby on the way, I am in need of a technical recipe that I can enjoy upon the birth of my child (hopefully a boy) Expected birth date is late February. I think it would be cool to have a brew fermenting throughout my fiances pregnancy. All beer styles and recipes are much appreciated. The more exotic the better... I am looking to get crazy with this one.

If you want to do something other than beer, a mead would be nice. And Joe's Grape Mead would taste absolutely wonderful at the 9 month mark.

It's like a tasty red wine with some honey nose, nice legs, and gentle honey aroma and flavor.

Hm, I would go pretty big, but not over 1.090 personally.

Russian Imperial or Barleywine would be my selections. Both would be nice in the cold weather.

I have several meads and wines in fermenters already. I am an avid beer brewer, but for some reason I have been on a small batch wine and mead kick lately. I am looking to do a beer for this one though.

Being that it's in Feb. you could do something that is historically consumed in the spring. You could do a trippel. They are usually in the 1.08 range, and start to age nicely around 9 mos to a year. Historically you would open it in March, but close enough.
