Hey Brewers,

Just racked my secondary where I used a bunch of Azacca hops. I've never used these before, but was enticed by its advertised tropical aroma/flavor.

I used this along with Phoenix (1oz bitter) Mosaic (.5 oz 15 min) and Azacca (.25 oz 15 min, .25 oz 10 min, .25 oz dry hop) for my pale ale recipe.

Anyone have any extensive use of this hop? It smells so good that I want to use it for other creations.

Just kind of wondering what other brewer's experience with these hops are like and if anyone wants to share any thoughts on this particular hop variety.

Thanks!

I'm also currently using it for the first time. Smells great, but haven't tasted anything but the hydrometer yet. My initial impression actually isn't super great, but hey the beer isn't done yet, so who knows. Will see when its ready in a week or so.

Edit: Not sure what I did with this one but I do not like it at all to be honest. Used a big dose in the whirlpool (30 min) and the dry hop (about 2 ounces in 3 gal). It almost tastes off to me but I don't know. I also didn't like Founders Azacca IPA so maybe I just don't like the hop? ANyone else feel this way about Azacca?

Have only used it once - should have used a lot more.

Used it with a Magnum bitter

Late boil of Azacca, Amarillo, and Citra

Whirlpool of Azacca, Chinook, and Citra (2:1:1) with 5 day dry hop the same. Loved it.

After boil chinook and citra went amazingly well with it.

I bought 3# of them a while back and experimented. Alone, they are unremarkable (I bought into the description too, but it didn't prove to be reliable). I used them in IPAs. I did make a superb IPA last year that had azacca in it, but I'd say the beer excelled in spite of the hop (had columbus / cascade / simcoe / amarilllo / chinook also)

Use them in my summer wheatPA thing with Amarillo, Motueka and Sorachi ace
Dig it

Northern Brewer has an Azacca pale ale that I've made and liked. More of a tropical edge to them than grapefruit or pine.

I have used this hop once before and really liked it. Green Bench makes an IPA called sunshine city that has azacca, citra, and mosaic that is amazing. I have also heard FFF uses this hop in space station middle finger which is also really good. I just got 8 ounces in the mail from morebeer. The AA is 8.24%. Never heard of AA being this low for Azacca? What are you seeing?

stone also uses a bit of azacca nowadays.
they adjusted Ruination with it, and also stone ipa too (stone ipa has 5-6 different hops in the dryhop now)

I used this in a Pilsner IPA with some falconer flight. I loved the tropical smell but it was harsh at first. 3 weeks in the keg and I've REALLY started liking this beer. This may have more to do with the Pilsner malt I was screwing with but I Think I like this hop...maybe a lot

I was surprised to see such a low AA as well. I emailed morebeer and they replied, "... Normally 14-16% would be the correct A.A., however Germany's last hop harvest had a very low yield also resulting in lower A.A. ..."

So it's just a different year for azacca hops. Maybe worse quality but maybe better? I'm brewing a D-MaSH tomorrow or the next day to showcase and learn this hops contributions... so kind of disappointing that I am using the outlying batch.

I thought all Azacca came from the US?
