Does anyone know what the mineral qualities of Austin city water is? I am trying to figure out how much gypsum I will need to simulate London water for an ESB.

Your water, like mine here in College Station, is very alkaline with an excess of bicarbonate. You can use lactic acid to bring that bicarbonate level down, but you still might be too alkaline for a good mash.

Check out Palmer's excel spreadsheet in chapter 15 of howtobrew... play with additions of the different acids to bring your target SRM into the right range. H2SO4 might help with some of the sulfur content you'd get out of the gypsum too. Just play with it some.... and good luck!
