Apples in seconday, massive sediment overnight.....

Hi guys. I started a Mead with 20 gallons of honey in a full 6 gallon carbon. It fermented down to 1.000 in about a month. It appears to be finished so I racked onto 2lbs of sliced up apples and 14 cinnamon sticks and topped it full.

The yeast cake was about an inch deep in primary and mead was Cloudy but too bad.

After sitting overnight in secondary the mead had cleared significantly BUT there's near 2" of light colored sediment on the bottom and the column is just full of still falling debris. It seems large in contrast to fine yeast particles.

Is this coagulation of patient dropping out or what?

How long should I leave it sit on the stuff. Also, the apple skins have mostly lost their color. I'm guesstimate stuff will compact over time so I don't leave as much mead behind when I Rack off it.
