Anybody have a really good recipe for apple wine made from freshly picked apples. There are plenty of threads using apple juice, cider, etc. picking apples next month and want to come up with a good plan.

Looked the sweetening method.
Why would one add honey /sugar until the yeast is exhausted to sweeten rather than add potassium sorbate and then back sweeten. What's the advantage of each? Or preferred ?

Well, I only add the honey to smooth out the taste, and never to the point of sweetness. I don't drink sweet wines, as I just don't care for them.

I don't care for the taste of sorbate, but I've used it in other wines that I've wanted to sweeten for gifts for others.
