Hey All,

So for an experiment I simply added 13 frozen cans of apple raspberry concentrate, 5 gallons of water, 1 cup of sugar, and a pack of champagne yeast to my carboy. What will this create? Cider? Wine? neither? I accidentally forgot to take an initial hydrometer reading (This is why i'm on the newbie forum!! I think I can just make the same mix proportionally and get roughly a correct OG), does anyone have any idea what ABV I will be looking at? Also I was thinking 2 weeks in carboy, bottle with 5 oz corn sugar in the bottling bucket, leave 2-3 weeks in bottles.

Comments? Advice?

Thanks!

Dave

It'll be a dry cider.

I make something similar (~3 cans concentrate per gallon of must, but no added sugar), and I used EC-1118 yeast.

I think the OG for mine was 1.052 and FG of 1.004 (~6.2%). I also added 12oz. fresh raspberries per gallon in a secondary, and also aged on some oak.

A word of advice though - it will need time to age. It may be drinkable young, but it will be tart, dry, and likely a little puckering when young.
