Apollo, Mosiac, Simcoe IPA critiques?

Have a bunch of these hops in the freezer I need to use. I figure the big grapefruit & dank of the Apollo will go good with the fruit from the Mosaic.

Thoughts?

Looks great to me! If you wanted to tweak something you could lose the crystal malt add Munich or just leave it out all together. However 6oz is a sensible amount. I also think that whirlpool hops add more bitterness than software indicates I'm working within my system to adjust my additions to get it exactly the way I like it. ( love the practice!)

Apollo wouldn't be my first thought with Mosaic and Simcoe. You'll get quite a lot of complexity from simcoe and mosiac together alone and Apollo isn't really a mono dimensional hop either. My worry is it could get muddled with that oz in the hop stand.

If you want something to make the Simcoe and Mosaic pop, I would say use something a quite more fruity/citrusy. I know barellhosue IPA uses Simcoe, Mosaic and cascade and that's a great beer.

My inclination would be to for a touch of something like citra or galaxy or a C hop like cascade or centennial

Malt bill looks good, though you could probably drop the crystal and sub for wheat or a flaked adjunct.
 
Sounds sold, I'll swap out the 15m and whirlpool Apollo for Cascade and use some Warrior for the bittering charge. I have almost a pound of Cascade in the freezer so I could stand to use up some of that as well.

Thanks, the local homebrew shop was out of Marris Otter so I changed the grain bill to 13lbs of 2 row and I swapped the crystal for 6oz of flaked wheat.

Brewing Sunday, can't wait to see how it comes out.
 
How did this turn out in the end?

It came out really really tasty. I've been experimenting with water profiles and for this IPA I dialed the sulfate down to about 180, where my last IPA was around 300.

Lot's of citrus and a bit of fruit with just a hint of pine, a nice aroma and a good mouthfeel. Fined with gelatin so it's crystal clear. The lessened sulfate I think makes the hops a little less agressive and made this a real hop forward but easy drinker that even my wife who doesn't normally like IPA's really enjoyed.

The keg is almost kicked and I think I'm gonna brew another batch straight away.
