Today I "brewed" my first Apfelwine. I used Cot De Blanc yeast. On the packey it said to rehydrate with 100 deg -105 deg water. Past experience has told me that a temp that high will kill the yeasties. But I followed the directions. Am I good or should I get another pack and pitch dry?
 
I came home this morning and low and behold the Apfelwein is bubbleing like crazy!!!!!!!!!!! 6 weeks and its on!!!
 
I just bottled a few days ago after almost 8 weeks and it's so good. It's going down really easily!
