For those of you who haven't had Zabaione it is a fantastic italian custard desert.

Here is how you make it.

6 Egg Yolks
1/3 cup of sugar
3/4 cup of Apfelwein:)
1/2 cup of whipping cream

Mix the yolks, sugar, and Apfelwein in a METAL round bottom Bowl.
Place bowl over a half-pot of boiling water(like a double boiler) making sure that the bottom of the bowl doesnt touch the water.
Mix and fold air into your mixture with a wire wisk until it triples in volume.
At this point it can be used as a desert "sauce" or you could cook it a little further and use it more as a custard.
I like to whip the whipping cream and fold it into the zabaione to give it more volume and serve it cool with fresh fruit.

You could use any kind of wine but I found EdWort's Apfelwein tastes great.
 
I've made a Zabaglione ice cream with various beers before. Maybe that would work too. Very similar recipe.
