I am going to make a 3-gallon batch using the original posted recipe. I will adjust the sugar amount but should I also adjust the yeast or just pitch the whole packet?

I have done 1G batches using 1/5th of the pack. Given that Pasteur is $2 I might pitch the whole thing for 3G. I think half the pack would work if you want to save a buck.
 
You certainly won't harm anything pitching the full packet. On the other hand watch the rate you drink the stuff. :D
