How old is it. Mine will be a month in a few days. I am very impatient when it comes to aging my brews and I am having a really hard time not sticking the thief in there and snagging a bit.

mine is a month. ill admit, it doesnt taste like i pictured it, but it is still really good. I am impatient as well, so as soon as i hit the 4 week mark, i moved it to bottles, i imagine that it'll get better as it ages

Just tried my my apfelwein for the first time. It rocks!

Thanks Edwort!

Bro, I'm drinkin it now!
And, about 45 minutes ago I was filling those 1 liter ez cap bottles for stocking stuffers. I made a cute label too..one sec here it is.

But, after drinking it today, I'm thinkin I'll just hold on to those bottles! :D:D

Nice label! I had a buzz after 1 glass! definitely stronger than I expected! Im gonna need some asprine tomorrow morning.

on my 3rd batch now. took advice and brewed 2 batches at once. got impatient with the 1st and drank it a bit green...but the 2nd was GREAT after letting it sit awhile...awesome stuff

Don't forget the general warnings on Apfelwein!!!

GENERAL WARNINGS

Excessive consumption of Apfelwein WILL get you drunk at warp speed.

Drink a quart of water and take 3 aspirin before going to sleep tol help reduce the effects of excessive Apfelwein consumption as well as the urge to call EdWort a M'F**kR the next morning!
:D

I had the first taste of mine last evening...just a tiny sip. I thought it was pretty good stuff for just a month and a day old. My wife liked it too.... and she's the family wine drinker so that's gonna work out well.

The trick is to keep making it until you start drinking 6+ month old batches. I'm currently drinking the batch I started on the 4th of July. Heh.

I just made my first batch of Apfelwein and I airlocked it before I moved it to the fermentation closet. Some vodka from the air lock looked like it got into the fermenter. Is this gonna cause a problem?

I see everyone on this forum loves this stuff. My question is this. I was never a big fan of Shandy or Magners when I was in London and the last time I had Cider Jack was quite a few years ago and I only felt so so about it. Knowing this would it be worth it for me to brew a batch of this?

No brewing necessary. This will be the easiest 5 gallon you'll ever do!

Can I use a 6 gal carboy or is less headspace desirable?
Sure. But if I were you, I would just add an extra gallon of apple juice and make 6 gallons worth. Make it easy on yourself and stick with 2 pounds of sugar.

I usually only use a pound of sugar when I make my 3 gallon batches. It has plenty of alcohol at that level.

I think you will like it. It's a very dry wine with a hint of apple sourness after-taste. I prefer to bottle it sparkling at a rate of an ounce of corn sugar per gallon of apfelwein. The carbonation seems to bring out more of the flavors and it also makes it a bit crisp.

Sounds good. I think i will give it a go when my carboy empties around Christmas. I need to slow some batches down because I can't empty my bottles fast enough haha! this sounds great because it is a longer ferment time and will set me up for some good Feb-March brewing! :tank:

Heh. I plan on blowing 3 cases of home brew next week: Family, friends, Christmas, entire week off.... I would probably blow more if I was in NJ.:D

Well I just started up, 3 brews under my belt but none are conditioned yet so I am still emptying commercial bottles and waking up with some serious headaches! Haha. It certainly is fun though.

I have about 100 bottles now (12 pint) and I used about half of them on my first brew. Now I have my Bitter coming up at Christmas and I have just enough. My Altbier is gonna condition for a while so I have time to bottle those. But after that I am gonna slow down and the Apfelwein seems like a good idea because it is a 6 week ferment time.
