Just brewed another Pale Ale what do you think of this:

1 lb 60L steeped at 165degF for 30 minutes
5.5 lbs Light Dry Malt Extract
60 min boil
.5 oz Amarillo @ 60 min left
.5 oz Cascade @ 45 min left
.5 oz Cascade @ 30 min left
.5 oz Cascade @ 15 min left
.5 oz Cascade @ 5 min left

Ice Bath to 74deg. Pitched US 05 yeast. Total about 6 gallons.

Gravity before yeast: 1.04

My fermentation temperature has been mostly 68F-70F with a couple hot moments at 74F.

Right now it's still in Primary on day 17 of fermentation. I did primary in my bottling bucket so I figure I'm going to have to rack to my carboy before going back into the bottling bucket. Any suggestions on time in secondary? Should I dry-hop?

Is it an IPA or an APA? I was thinking about dry hopping another .5 to 1 of Cascade.

Cheers friends!
Larry

ooops I messed up bad, had wrong equipment in beer smith.

I would say closer to Pale ale.

At 1.040 OG, you aren't anywhere near IPA style guidelines and a bit low on OG for an APA. I'd be calling it an almost APA.

And hopefully it won't taste like rocket fuel. Us-05 likes 68 degree wort temp, and not much more than that in my experience. Sounds like a great apa though.

last batch i made was similar but fermented at 80. it was drinkable... i think this one should be pretty good.

any input on when to transfer to secondary carboy and for how long before bottling?

I wouldn't do a secondary unless you have a super compelling reason to do so. 17 days out you could probably bottle it or let it sit for a little while longer to clear in primary.

The temperatures you post, is it ambient or the wort temperature? I suspect it's the former.

it is ambient. i know its not ideal... but im working on it.

i was going to go to secondary for the main reason that my primary is my bottling bucket. should i just bottle straight out of the primary? i think ill get a chunky beer.

I would dry hop it for a week-ish in secondary, then bottle. There will probably be too much yeast at the bottom to bottle out of primary.

cool thanks for reply. this was my plan. i've heard that dry hopping might help with esters too!

Dry hopping will help in that it will cover up some esters, that is, until your fresh hop aroma fades from the bottle.

he used bottling bucket as a primary so he has to transfer to a secondary at least for long enough to clean the bucket. Might as well let it sit a week or so and dry hop while you are at it

If he used a bottling bucket for primary, that would be a compelling reason to do a secondary...
