Well, brew-day went well. We ended up getting really good efficiency off the grains at 91%. I wanted .5-1 gal starter from the wort (for the high gravity yeast) and I can only boil about 9-9.25 gals. I ended up not getting as high a gravity start as I wanted though (1.076) because I pitched the aromatic hop additions in a little earlier than I should have and I didn’t want that to boil off. Ended the boil with about 6.5-7gals after about 75-80 min boil. Worked out great though because I ended up with a lot of trub on this one. So I left 0.5 gal of trub behind, filled 2 quart starter and dumped the rest in the fermenter. Over the course of 14 days I feed the yeast with a little over a pound of dextrose a day tapering off near the end. Ended up adding 14 pounds of dextrose in total. As of now FG is at 1.028 giving me about 16.5% ABV. Taste a little sweet though. So I added some amylase going into the secondary while dry hopping. Plan on kegging this one and lightly force carb (1 vol or so).
