I recently bought a smack pack of 2112 to brew a red ale. I broke the seal on the smack pack and let it sit overnight. It swelled nicely. The next day I added 4 oz of light DME to 16 oz of water, boiled and cooled it, aerated it and added the yeast for a starter. 3 days later there had been virtually no activity so it let it sit another 4 days. Very little activity. I had thrown the smack pack out and didnt notice the date.
I thought i'd start over so i bought another package of yeast dated June 2018. Repeated everthing. Kept it at 68 degrees f. Had the same results. I shook it and waited for another 5 days before brewing. Day of brewing, the final gravity was .015; low but not low enough.
I ended up pitching it into my beer but after no bubbling for 3 days I added a pouch of safale k97 that took off within the hour.
Has anyone else had this problem with 2112? I've used it before and never had an issue like this. I'm thinking that since Rush retired, maybe the yeast strain has quit working too. just kidding....must be a bad batch of yeast.
