I am a noob and just started my first batch last night. I know I am getting way ahead of my self but has anyone done a pear cider and if so what recipe did you use. thanks
like Maylar, I'd like to know where you're getting the pear juice.for now I am just using juice from store bought apple/pear juice.
I have a good relationship with a local farmer and his son. I get 900 pounds of pears for $200. The secrets come down to selecting an appropriate pear, developing a personal acid blend (malic, citric, ascorbic) that then needs a ratio of this blend to liters of cider, use a blanc tannin, choosing a good yeast (think outside the box here - I do not like most cider yeasts), and I like to use Allulose to back sweeten when needed. In my conversations with the farmer, he prefers to call pear cider "pear cider" when using table pears, and "perry" when at least ~20% perry pears are being used. If you take your time, you will discover a magical acid blend for pear cider. The easier part is determining the grams of this acid blend per liter. I work with some 4-oz graduated cylinders to do most of my testing to get the acid/tannin/sweetness balance worked out. My current focus is to acquire 900 pounds of "Doyenné Du Comice" pears later this summer. I want to focus on making a French Poiré cider and a few other experiments. The trick is having everything ready before picking up the pears, as the clock starts ticking once they come out of cold storage. Recipes need to be prepared, yeast, tannin, water chemistry chemicals, etc., must be acquired. I wrote a bunch, but realized I didn't provide any details.
