it depends what you want in an on-line service....

rackers.org/calc/shtml is good for a mashing calculator

beercalculus.com/recipe is pretty good for recipe development

+1 for beercalculus.hopville.com. It's pretty much the only thing I use anymore. And you can't beat the price!

The only trouble I had with online calculators is having to use 2-3 different ones to figure everything out.

Although Brewmansters Warehouse brew builder works really good.
and I think it even stores your recipes for you
