I brewed a festbier 8 days ago. I got the temp down to around 70˚F with the wort chiller and then stuck it in the fermenter at 48˚F overnight. The next morning I pitched my yeast starter, (Wyeast #2206) and turned it up to 50˚F. Two days later I turned it up to 52˚F and that's where it's been. The yeast took right off within hours, there was good krausen and decent activity in the airlock. My plan was to leave it in primary at 52˚ for three weeks. Then I'm going to bring it into the house for 2 or 3 days at room temp, (about 70˚F), transfer it to a corny keg and let it sit at 40˚ for 60 days.
That was the plan. I just looked at it a few minutes ago. It still has just as much foam sitting on top but there doesn't seem to be any activity in the airlock. I watched it for about a minute and nothing happened. My question is, should I just leave it alone and continue on with the original time schedule, or should I take a gravity reading now? When I first designed the recipe I had it sitting in primary for 2 weeks at 52˚, but 2 weeks falls on Christmas day and we'll be out of town that weekend. We don't usually do much for New Years so I figured I was safe letting it sit in primary for an extra week. I'm still fine just letting it sit - I just thought there would be at least some minor activity in the airlock still.
