How is your grain crushed? If you're consistently missing your OG, are you taking note of the pre/post boil gravity readings in regards to your volume? You need to analyze YOUR results and use those to form YOUR repeatable process, not what some other guy did with the same recipe. For example, I know the markings on the side of plastic fermenters aren't always the most accurate, but I figure since that's the only measuring tool I use, as long as I'm consistent I'll end up with repeatable results even if it isn't exactly 5 gallons of finished wort.
Taking note of all the numbers you hit is pretty important to be able to brew AG batches consistently.
