Currently brewing a tropical American wheat ale. Looking for a fruity, tropical hop profile with low bitterness at 35 or so IBUs. OG was planned to be 1.45 and and a finished ABV of 4.75% or so.
For some reason or another, my boil off rate was significantly lower than normal, leaving me with about 15% more wort in the kettle with an OG roughly 4 points off (1.041 vs. 1.045). I ran out of time, so I couldn't continue the boil, so I just transferred the entire batch and pitched.
In the absence of having an easy way to evaporate more wort, should I...
1.) attempt to add some dissolved DME for OG purposes?
2.) add the DME and add additional, small amount of hops to maintain the same IBU and flavor profile?
3.) RDWHAHB? Is a slight dip in OG/ABV going to be noticeable on a lower ABV beer?
Thanks!
