I am sitting on a batch of wort that is not wanting to start fermenting. As of this morning, it is at 60 hours. I am using Safale 05 that I rehydrated and it had formed a nice head in my rehydrating vessel when I pitched it. My wort was at 66 degrees and the yeast was at 66 degrees. The hiccup in this story is it got cold the night I brewed and when I checked on it the temp of the wort was 60 degrees. I have since brought it in the house (no ferm chamber) and it has warmed to 68. My questions are, should I give it some more time? Mix it and give it some more time? Or re-pitch?
