Hey All,

I am sitting on a batch of wort that is not wanting to start fermenting. As of this morning, it is at 60 hours. I am using Safale 05 that I rehydrated and it had formed a nice head in my rehydrating vessel when I pitched it. My wort was at 66 degrees and the yeast was at 66 degrees. The hiccup in this story is it got cold the night I brewed and when I checked on it the temp of the wort was 60 degrees. I have since brought it in the house (no ferm chamber) and it has warmed to 68. My questions are, should I give it some more time? Mix it and give it some more time? Or re-pitch?

Thanks in advance,
-J-

I'm assuming you're concerned about a lack of airlock activity. What about krausen? Is there any present on top of your wort?

Yes, the temp is a little low, but not enough to prevent fermentation.

The 66/66 was good, and I'd be surprised if the drop to 60 dropped the yeast out of suspension before it started.
So Q1- how have you determined it's not fermenting? Don't rely on no airlock activity.
You've warmed it up nicely. Give the bucket a swirl to potentially resuspend the yeast. And if you still don't see any activity within another 24 hours, take an SG to check. Good luck!

I found the culprit. Apparently my airlock has a crack in it allowing the gas to escape. I opened up the fermentor and saw a nice thick krausen, that is when I noticed that the airlock was not working properly. Thanks for your help.

Good to hear. Also, S-05 can sometimes be active with little airlock activity to show for it.
