So i have made a rather strong belgian , around 9% Abv.
Simple recipe with pilsner and Pale malt plus rock candy Brown sugar and 2 packs of candy syrup d180
Mash went well and hit intencional OG and fermented for 3 weeks.
FG was 1.010 and bottled it after a 2 day crash cool.

The have been in the bottle for 7 weeks now at pretty constant temps 68 to 70F. carbonation is existent but low. i did not repitch yeast whel bottling but only crash cooled 2.days....figured that was enough yeast to carb.
yeast used was wyeast 3787 . pretty solid up to 12% so should not have a problem with my 9% boose.

Do you think this will carb intended volumes? i targeted 2.9 vols as i like them pretty carbed

More time at 70F?
 
Ive used this strain a couple of times. The lower gravity carbed up nicely but my 9% tripel took ages to carb and some of them i'm still waiting. Probably my fault for not mixing properly but be patient. Sometimes this yeast will just totally drop out and quit and then be a complete pain to get to do anything. Time is your friend i reckon. It'll give it time to balance and will only start to taste better
 
FYI
Beer carbonated on 9th week.
Still has weak foam retention but with time o believe it will get there!
Tastes amazing by the way
