Just bottled some apple cherry cider. About 5.5%.
I let a gallon ferment for 3 weeks, back sweetened with 6oz apple juice concentrate to take the FG from 1.000 to 1.010. Bottled it up and have it sitting in the closet on a shelf to bottle carb.
My question is this...I bottled half in crown cap bottles with crown caps. Those bottles look like my other batches....they're sitting there doing nothing.
The other half i bottled in re-used clear redds apple ale bottles with re-used twist top caps. I used saran wrap as a "seal" before putting on the twist top caps, which was pretty tight. This method has worked for me pretty well on 10-15 bottles so far at sealing the bottles and holding carb levels for over a month in the fridge. This group of bottles is bubbling visibly in each bottle. I can see the active fermentation going on. This isn't normal, correct? Does this mean my bottles aren't fully sealed? Or does it mean fermentation is just very active and I better toss these in the fridge to avoid bombs?
The only reason I bottled this way was because I did not have enough empty crown cap bottles to bottle all of them that way.
