A few years ago I brewed a wheat beer using yeast cultured from a bottle of Harpoon UFO. The goal was an easy drinking summer beer and I liked that the yeast profile of the UFO is less dominant than a typical German wheat.

The home brew was not bad at all but seemed a little thin and probably needed a little more hops. My original recipe is below and I'd appreciate any suggestions to add body and flavor, but still keep it as a summer beer on the lighter side. I'd like to keep it extract with specially grains. Some thoughts are to add some carapils for mouthfeel and body. How about either flaked wheat or Caramel 10 L?

For hops, the Harpoon website used to disclose using tettnang hops. Adding a little more for bittering and also adding some aroma hops may be helpful as well.

Original recipe

6 lb MES German Weizenmalt ( Williams M77 resulted in perfect yellow straw color)

1.25 oz tettnang (3.3%). 60 min
0.5 oz tettnang (3.3%) 30 min
Yeast cultured from Bottle of Harpoon UFO
OG 1.040
FG 1.009
