I am prepping to do an American wheat beer with a mild hop character ( shooting for boulevard wheat or goose island 312) and was wondering if anyone had used either of these in an American wheat. They both sound like they could be very good yeasts for this style.

I wouldn't use Windsor for it. I like Wyeast 1010, but West Coast Ale would work well, too, depending on what you are going for.

I like Wyeast 1007 German Ale for my house wheat beer, but it is based on an altbier and is not particularly happy.

Then that makes me very sad :(

But on a serious note, wyeast 1007 would be a great choice for liquid yeast since it's a serious low floccer. If you're dead-set on dry yeast, then bry97 or any chico strain would work fine.

An American wheat? No doubt then, use west coast ale over Windsor for any American beer IMO.

I've got some wlp002 slurry I wag thinking about using for an American wheat. Gonna dry hop with citra.
