So i put together a starter for WL American Ale last night and this morning it's looking pretty dull. I usually have a stir plate but lost my stir bar, tiny little bastard :mad:. I'm thinking that may be why it doesn't seem as active but may still be good. My question is though, I've got some extra Safale lying around so would it be ok to pitch that w/ my starter in case the WL AA isn't good?:pipe:
 
Yes, if you have US-05 it is the same strain. If you don't think your strater is working you can just pitch dry yeast also.
 
With -05, or any dry yeast, rehydrate it in cool.......not warm, not cold.... water. It will double the number of viable cells as compared to rehydrating it in wort.

Owly, most resources suggest rehydrating around 85-90. Do you have anything to back up the suggestion that we instead aim for 'cool' water?

edit: sorry, just checked and most sources suggest 95-105.

Unfortunately I did not keep the link to the study that showed this........ Someone else on this forum gave a link to a study that clearly showed that cool water was best in a similar discussion....... I believe it was about why NOT to make starters with dry yeast..... of course once the yeast has rehydrated it is a different story.

Just now did a search.......... here's the test:

We are talking 64F as opposed to 80F (79% viability versus 75%... not huge) The huge difference is in wort........ either warm or cool it's 43%. Rehydrating in cool water is about the same as pitching two packets in wort....

Thanks for all the help! I threw the safe ale in along with my starter and got a nice Krausen going today (Though somewhat low airlock activity). Looks like everything is going to be ok :)
