Brewing a Founders Porter clone and realized that I did not get one of my hops at the store when getting my ingredients. Recipe calls for .75 oz at 20 minutes and .25 oz at flameout. Any suggestions on alternatives? Would dry hopping when I move to a carboy help? If so, how much would you suggest? A full ounce?

Thanks.

Most websites, like Midwest, list alternatives for each hop. Try looking there. and subbing dry hopping for the flame out addition should do fine. An ounce is a good, average amount. Although when I'm adding a big dry hop, matching all the flavor hop additions that were in the boil, I'll use like .8oz of each. since I'll likely use 3-6 different hops, that's still a goodly amount.

I read this as "I dont have any hops, and forgot to buy them, can I use anything else in the boil?"

If Im right....then No. Go buy hops before you make this beer.

That is what happened. However, I did not realize that I was missing one of my three hop varieties until I had started to brew. So at this point my alternatives are to do nothing and see how it turns out, or to dry hop prior to bottling.

Here is the original recipe I found elsewhere on HomeBrewTalk, orginally posted by psychobrawler. It is the Willamette that I am missing. I have since ordered an ounce of hole flower Willamette hops, that should arrive in a few days.

9.5 lbs 2 Row
1.25 lbs Chocolate Malt
1 lb Munich
10 oz Carapils
6 oz Crystal 120 L
4 oz Black Patent

Mashed at 155 for 60 minutes
75 Minute Boil

Hops:
60 min - 0.75 oz Nugget (12.2%)
20 min - 0.75 oz Hallertau (4.5%) and 0.75 Willamette (4.9%)
Flameout - 0.25 oz Hallertau and 0.25 oz Willamette

For yeast, I used WLP001.

If you get the Willamette I would dry hop the whole ounce. I have never used leaf hops so I don't know how this would compare to pellet, but I would use at least an ounce of pellet hops. This recipe does not look like it should be very hoppy so one ounce should be nice.

Ah, so you have other hops, you are just missing a specific addition.

Dry hopping with that ounce would be fine. Leaving it out completely would probably also be fine.
