Altering an IPA kit into a double IPA

I'm interested in how someone would do this. It is my understanding that the difference between the 2 is hoppiness and OG/FG. Other than that there isn't much difference or is there?

So I could in tease say the brewers best IPA and increase gravity and amount of hops during the hop schedule and turn it into a double IPA or am I on the wrong track here.

Oh I ask cause I have the kit and thought about changing it.

Your understanding is on track. The IPA/IIPA line is somewhere around 7.5% abv. With the increase in alcohol, you will need more bitterness to balance out the sweetness. Just keep in mind that with the increase in OG, you will want to make a good sized yeast starter and make sure to aerate your wort well. Yeast nutrients wouldn't be a bad idea either.
 
Doesn't Brewers Best offer a IIPA kit? Maybe compare it to the IPA kit?

I think you are headed the right way, check out hopville and use that to tweak your idea.
